Key Responsibilities


Production & Baking


- Prepare and bake daily production items, such as cakes, cookies, brownies, biscuits, and other menu-specific items.
- Accurately follow standardized recipes and portion sizes to ensure consistent quality.
- Assist in developing and testing new recipes in coordination with management.
- Monitor product freshness and quality, ensuring all items meet company standards before dispatch.
- Operate baking equipment such as mixers, ovens, proofers, sheeters, and blast chillers safely and correctly.






Kitchen Organization & Workflow


- Plan production schedules in coordination with kitchen manager to meet daily order requirements.
- Label, date, and store ingredients and prepared products according to FIFO (First In, First Out) method.
- Monitor inventory levels of raw materials and report shortages in a timely manner.
Minimize wastage by proper measurement, scaling, and efficient batch preparation.






Hygiene & Food Safety


- Maintain a clean and organized workstation at all times, adhering to Saudi food safety standards.
- Ensure compliance with local municipality hygiene regulations.
- Regularly clean equipment, utensils, and kitchen surfaces.





Collaboration & Communication



- Work closely with other kitchen staff to ensure smooth production flow.
- Communicate any issues with quality, equipment breakdown, or ingredient shortages immediately.
- Coordinate with dispatch team to ensure timely order preparation for delivery.




Equipment & Maintenance


- Conduct daily checks on mixers, ovens, and other bakery equipment before use.
- Report maintenance issues promptly to avoid downtime.
- Follow standard operating procedures (SOPs) for equipment operation and cleaning.



Documentation & Reporting


- Keep accurate records of production batches, wastage, and daily outputs.
- Record ingredient usage to assist with inventory management.
- Assist management with cost-control efforts by suggesting improvements in efficiency.




Qualifications & Skills


- Experience: Minimum 12 years of hands-on bakery or pastry experience (cloud kitchen experience preferred).
- Education: Culinary/bakery certification preferred but not mandatory if experience is strong.
- Technical Skills: Knowledge of basic baking techniques, recipe scaling, and commercial baking equipment.
- Soft Skills:
Time management and ability to work in a fast-paced environment.
Attention to detail and commitment to consistency.
Good communication skills and team player.





Work Conditions & Schedule


- Based in a cloud kitchen environment (no dine-in guests).
- May require early morning or evening shifts depending on production schedule.
- 6-day work week (1 day off).
- Standing for long hours and lifting ingredients up to 25 kg may be required.
